I think that's really Sam's m.o., you know? There're certain things he'd maybe view as just his and have a hard time letting Dean see it.

And, yeah, I think Sam/Jess is one of the best canon relationships, maybe because there's so much room for writers to flesh it out, and maybe because so many awesome writers have.
